Ingredients

  • 4 (about 2 lb / 900 g) Bone-in chicken thighs
  • 1½ lb / 680 g Baby potatoes, halved
  • 3 Tbsp Olive oil
  • 1 large Lemon, zest and juice
  • 3 Garlic cloves, minced
  • 1½ tsp Dried oregano
  • 1¼ tsp Kosher salt
  • ½ tsp Black pepper

Method

  1. Heat the oven to 425°F / 220°C. Line a sheet pan.
  2. Toss potatoes with 1 Tbsp oil, ½ tsp salt, and a pinch of pepper. Spread on the pan and roast 15 minutes.
  3. Stir remaining oil with lemon zest and juice, garlic, oregano, remaining salt, and pepper. Coat the chicken.
  4. Add chicken to the pan, skin-side up. Roast 25–30 minutes more, until the thickest thigh reads 165°F / 74°C.
  5. Rest 5 minutes. Spoon pan juices over the chicken and potatoes.
